Colinas de Fátima – Red and White Wine

Harvest : 2008

Made from selected grapes coming from the hills and slopes arround Fátima, this wine was created to offer a symbol of added value and high quality, made in the region.

This is a very elegant and bodied wine that provides a unique souvenir of the flavours of Fátima.

RED Wine

Organoleptic characteristics

The grapes harvested by hand, in a farm from the region (Quinta de Sao Gens), come into the wine cellar in great conditions, where they are partially destemmed and crushed, following up with the fermentation by the traditional method in stainless steel vats, during 8 days, at a controlled temperature, between 26°-28°C. Afterwards, the malolactic fermentation occures during 8 months, 1/3 in stainless steel vats, and the other part in barrels of French and American oak. And finally 6 months in bottles.

Wine-making process

It has a limpid aspect, with intense rubi colour. It has young and fruity flavours like jam. With a smooth and very elegant taste, full-bodied revealing notes of ripe and red fruits, persistant, with good quality tannins very well integrated that ensure some longevity.

Suggestion

Great choice to go along with meat dishes and cheeses. Should be served between 17°l8°C. This wine fits perfectly for immediate consumption, but can be kept stored in bottle at least during 3-4 years.

WHITE Wine

Organoleptic characteristics

It has a limpid aspect, pale straw colour with intensive flavours and notes of tropical fruits and nuts, characteristic of Fernao Pires grapes. In the mouth, it is fuity, young, fresh and balanced, ending dry and persistant.

Wine-making process

The grapes harvested by hand, in a farm from the region (Quinta de Sao Gens), come into the wine cellar in great conditions, where they are crushed, following up with a pellicular maceration of 10 hours, in stainless steel vats, at a controlled temperature of l8°C. Afterwards the wine is fined, cold stabilised, filtered and bottled.

Suggestion

Ideal as an appetizer and to go along with fish and white grilled meat dishes. This wine should be consumed young.
